Although I knew it was a common and popular recipe in some parts, I was surprised to hear how many people didn’t know how to make Pineapple Stuffing and were looking for the recipe. It is easy to make and tastes amazing, especially with ham glazed with some kind of pineapple glaze or sauce.
We cooked (my wife and I together) an Easter ham dinner for 15 people on Sunday and of course, we made my wife’s pineapple stuffing. The recipe is her recipe but it is the same as a few popular ones I’ve seen, so it’s been passed around quite a bit.
We make it using potato bread but the original calls for white bread, but really it is a personal preference. Potato Bread soaks up the pineapple very nicely and gives it a little extra texture, though it is filling!
The recipe calls for a 9-inch pan to be used and I recommend sticking to it if possible. If you do decide to use a bigger pan, take care not to fill the pan too high as it will not only take longer, but you risk the outside browning nicely while the inside is still very wet and undercooked. If this does happen to you, simply remove the top quarter or more and transfer it to another pan.

Of course, to go with the Pineapple Stuffing and the ham, I made a Caramel Pineapple Glaze (my own title of course) to glaze the ham and make a sauce for the guests to drizzle over their plates, garnished with, of course, pineapple slices in the sauce bowl (for anyone who loves to munch on pineapple with ham - like me!).

Saint Patrick’s Day is fast approaching and to help celebrate the holiday, we’re revamped and updated some of Professional Recipes to help celebrate the holiday!

Normally, I’ll go out and taste some local Irish fare and have a few rounds with some family and friends as there is a good bit of Irish in my family. Ham and Cabbage, Irish Potatoes, and of course this year I am making the Corned Beef and Cabbage! More on that to come.

There are many people who enjoy cooking and working with food. From resourceful parents who can whip up a meal in 30 minutes with whatever happens to be in the fridge, to the person who simply likes to dabble with different combinations of food and create new dishes. Many of these people are looking for new ideas to try or simply wish to improve their cooking skills to impress guests, friends and family, or impress their date with a fabulous meal.
The difference between the home cook and the gourmet chef really comes down to knowledge and experience and oftentimes practice makes perfect (especially when it comes to food). How many times have you or someone you know attempted to make a dish only to have it taste different than what you expected or not look the way you expected or simply be over or undercooked? It happens to even the best of gourmet chefs from time to time. Even the pros (you just don’t see their mistakes or they know how to fix a mistake quickly).
So how does the average person learn to cook like a gourmet?
- Be open to learning new things: Try something new and creative that you haven’t tried before. Spend some time learning about the techniques involved and just go and do it! The more you try different techniques, the more you learn.
- Go ahead and watch the cooking shows: there are some truly resourceful chefs out there now using many different styles and with the variety of shows on the Food Network and other channels, there’s plenty to learn by observing.
- Experimentation: experimentation is the only way we come up with recipes, so go ahead and spice up that bland sauce or try something new for your old favorite, just remember to start small and tweak as you go along and reserve some extra time in case you overdo it.

I’m proud to “officially” announce the launch of www.professionalrecipes.com, or simply Professional Recipes. At 12:01 am on February 1st, 2008 the new version of the website launched, but there is much work to be done still.
I wanted to develop a content-rich website that offers gourmet and homemade recipes, information on cooking including articles and “how-to’s”, allow visitors to submit their own recipes, cooking tips and provide a place for interaction and comments.
We’ve included links to submit articles and content pages to Digg, Del.icio.us, Reddit, and StumbleUpon. Feel free to Digg pages or bookmark them for future reference.
The site features:
- Featured Recipe - a recipe chosen by myself to be displayed prominently on the site and allow it to be voted on by visitors. Ratings will be included with each recipe in our index to give visitors an idea of what others thought of it.
